Cauli Mash! As Requested by @GretchenKoch

I have eaten cauliflower mash three times this week. Do not judge me.

@GretchenKoch - here's the recipe. It's super easy, but a bit time consuming. Pleasepleaseplease make sure to cook off the excess water, it's what makes it so delicious!

1 small head cauliflower (or 10 oz of frozen. I've done it both ways, but prefer fresh)
1-2 wedges of Laughing Cow Low Fat Cheese, cut into pieces (My favorite is the garlic and herb one, but I'll be using French Onion tonight because it's what I've got!)
1 tbsp Earth Balance or butter
salt and a ton of pepper
(OPTIONAL: boil cauliflower in 1/2 vegetable or chicken broth, 1/2 water)

Boil cauliflower until super tender, using a fork to test. When it falls apart, it's probably ready. Drain. With a potato masher, mash cauliflower in the cooking pot. Put pot back on a medium burner to cook off excess water. Cauliflower retains a ton of water in the cooking process, so this step is extremely important. While the cauliflower is cooking, mash it every few minutes to release excess water.

Once the cauliflower is mostly dry (meaning that when you press on the mash with the masher, no excess water comes out). It will still be a bit damp, but that's OK. Add in cheese and mash again to incorporate. Add earth balance, salt to taste, and a LOT of pepper. I put a ton of pepper in it while it cooks, then a ton of pepper on top when I eat it!

Birthday E-mails: The only reason I signed up for your stupid e-mail list.

Last week was my birthday, also known as "the best day of the year." I got presents, good times, and drunk. What I was looking most forward to, though, were the Happy Birthday! emails from my favorite brands. 

I sign up for mailing lists all the time, mostly because you have to in order to get whatever coupon I am trying to print. Often, they promise you a "special gift on your birthday." Who doesn't like gifts?

Some of these brands, though, LIE. I got e-mails from just a few companies, and the e-mails I recieved weren't exactly stellar. Even Starbucks failed to send me my free birthday drink - AND I EARNED IT! 

I got e-mails from: 

John Frieda Hair Products - $2 off any product coupon. Hey, we all know that Amy loves coupons. This is high-value, and actually incentivizes me to go buy the product. I give this one an A-.

Sephora - Free eye makeup (eyeshadow, eyeliner, mascara). I'm going to go pick this one up, but only because there's a Sephora in the complex where I work. It would otherwise be a GREAT freebie, if the colors weren't so terrible. The eyeliner is green, the eyeshadow is white, which equals 1980 disaster eyes. The mascara should be cool, though. It'll go good in an emergency makeup kit. I give this one an A. 

Old Navy - $10 off $50 purchase. This one I actually used. I dragged myself over to Old Navy and picked up some damn good deals. I think I spent more than I would have without the coupon, so good job Old Navy. I'll give it an A. 

Jack In The Box - Free dessert. Who doesn't like dessert? (Even if it's from Jack in the Crack) A+ for sure. Perfect birthday incentive. 

Buffalo Wild Wings - Free dessert and six free wings (When you buy 12). Hell freaking YES. The boyf and I love to go to Buffalo Wild Wings and watch football games, so this one will definitely get used. I like that there was double-incentive here. This offer will actually bring people into stores. 

Now for the stupid ones: 

Wendy's - $1 off any purchase coupon. I only signed up for this list because they were giving away a free Frosty a few months ago. I know it's Wendy's, so I shouldn't expect much, but no thanks for your crappy dollar menu item. F for FAIL.

Nature's Bounty - I'm a hippie, so I take a few supplements. I only buy Nature's Bounty if they're on sale or there's a good deal, so I print coupons for their products from time to time. For my birthday, they were oh-so-generous to give me 25 Nature's Bounty points. When I get 500 of these points, I get a WHOLE COUPON. Wow, thanks guys. 500 points? That's a lot of damn fish oil.

And the iffy one:

Red Mango, a frozen yogurt joint in my work complex, sent me 500 free points. 500 sounds like a lot, yes? Unfortunately, I have no Red Mango card, nor do they have any record of my account. (I only have one e-mail address, and just a few variations of my password. Yes, I tried them all.) Apparently, according to their website, 500 Red Mango points = $5 coupon. This could be awesome, right? Except I have no way to use them. I tweeted @RedMango, but no response. We'll see. (And of course I'll update. I don't hate on brands for no reason, man!)

Hippie Chili With Black Beans and Roasted Sweet Corn

I'm currently striving for three meatless meals a week - if only to cut down on the amount of money I'm spending on meat!

I really wanted something comfort food, but decided against chicken broccoli casserole. Then: chili! I make vegetarian chili typically with Morningstar/Boca crumbles, beans, and tomatoes, and it is delicious. I checked the freezer, and I had about a tablespoon of crumbles. So, I had to get inventive!

Last week, my roommate picked up a few ears of sweet, fresh corn at the market. They were just sitting in the fridge (because roomie never cooks!), so I thought that a black bean/corn chili sounded ridiculously good.

The only problem: making it hearty. A bowl of beans and corn isn't really going to keep me full for that long. I thought about making some biscuits, but I just didn't have the patience for baking. Then, I noticed the quinoa! QUINOA!

My boyfriend called this "hippie chili," and I thought the name was so cute it had to stick.  This recipe is easy, hearty, and leftovers are even better! There is a bit of prep work in the roasting and prepping quinoa, but that's really just time.

Coat corn with a bit of olive oil or cooking spray, roll in S&P. Roast corn at 375 degrees until it is warmed through.

Hippie Chili

1/2 c quinoa, rinsed and prepared. (Mix with 1c water, simmer for 15 minutes until translucent and fluffy)
1 can black beans, rinsed and drained
1/4 to 1/2 pkg chili seasoning - depending on your taste
1 ear fresh sweet corn, roasted and kernels cut from the cob.
1 tsp ranch dressing mix (I just added this for a bit of extra flavor - you can totally omit)
1 can tomato sauce

Mix beans, tomato sauce, and chili seasoning in skillet. Cook until reduced slightly. Add corn and quinoa. Stir. Serve hot. OM.

Suggested toppings: Crushed tortilla chips/tortilla strips, sour cream or Greek yogurt, avocado, salsa.

This recipe can be mixed and matched any way you like - sub rice for quinoa, add Morningstar or beef. I wanted to experiment with adding lots of veggies, but wanted something easy for tonight.

Cheap Ways To Transition To Natural Household Products

Over the last couple of months, I've gotten much more serious about removing the chemicals we use to clean our apartment. While this transition has been slow going, it's actually been fairly cheap for me. 

We now currently have all natural dishwasher detergent, dish soap, all-purpose cleaner, sanitizing spray, bathroom cleaner, dryer sheets, and probably tons of other products that I'm forgetting. I'm now looking to begin purchasing natural personal care items. Shampoo, deodorant, facial cleanser, body wash, and toothpaste thus far, but I'll be slowly building for some time. 

I currently have a bathroom pantry full of products that I'm FORCING myself to use before going out and buying anything else. That is, of course, unless I get a deal! I plan to take all the unopened stuff that I'm just going to refuse to use to a domestic violence shelter. 

Here's how I did it:

1. Coupon codes and online shopping - Soap.com is a relatively new site (a partner of Diapers.com) and had a really great deal on ideeli just a few weeks ago, a $20 voucher for products for $10. I was particularly excited when I realized that they ship orders over $25 for free. I spent around $16 for $40 in all-natural products. Luckily (or unluckily, however you want to look at it) Soap.com screwed up one of my orders and gave me a credit for the hassle. I used this credit to buy even more all natural products for around $10. 

2. Scope out your favorite brands' websites - Seventh Generation and Method are my two favorite all-natural brands, specifically because I always see coupons and promotions for their products. Today, Soap.com has a code for 50% off of Method products. Trust me, you'll never find these products that cheap in-store, unless there's a major clearance. 

3. Discount stores and coupon shopping - I coupon, so often I use "extra bucks" or "register rewards" that I receive from the drugstores I shop to buy items that are otherwise expensive. For example, last week I was able to buy organic shampoo and conditioner for around $1. I had extra bucks that were about to expire valued at around $6. Then, CVS had these shampoos buy one, get one free. Saweeeet! My friend Traci also reports that house label all-natural shampoos and conditioners are around $4-$8 at Whole Foods. 

4. Take advantage of RecycleBank - RecycleBank.com is a site that rewards you for doing good green deeds. If your city has a program set up with RB, you can earn points simply for putting your stuff in the recycle bin. If not, there are codes available online for the site (do a quick Google search). Once you've accumulated points, you may cash them in for coupons and savings. I recently ordered B1G1 Seventh Generation (which is a really awesome deal) and B1G1 Clean Well products - both all natural. They have lots of other offerings on the site, including grocery store savings, discounted Omaha Steaks, and even cat food (which I thought was particularly random). 

5. Shop sales! - Target has Seventh Generation and Method products at relatively low prices, some are exactly the same price as their conventional counterparts. The one product that I've had difficulty finding at a good price is all-natch laundry detergent! I typically buy the free and clear offerings from traditional brands, but I'm definitely open to any suggestions. Clorox Green Works had several great coupons for a while, but it was still a bit too expensive for my cheap ass. 

My favorite products!

Dishwasher Detergent: Seventh Generation's Free and Clear product is really good quality, and has no phosphates or any other unnatural junk.

Dish Soap: Seventh Generation Lavender Flower and Mint - So great smelling, and again, great quality. 

All-Purpose Cleaner Method Pink Grapefruit - Smells DELICIOUS. I know there is some controversy among environmentalists regarding Method's use of corn-based surfactants, with which I agree, but there are just too few natural options for this one to be discounted. 

Bathroom Product: Method Eucalyptus Mint Tub and Tile Wipes - So awesome, and you don't have to touch any of the gross shit. Also, they're flushable and biodegradable. Definitely make the bathroom smell a bit spa-ish.

Shrimp and Mushroom Tacos With Avocado-Lime Crema

Tacos are so incredibly easy, and using shrimp makes them even easier. Buying pre-cooked, frozen shrimp is THE quickest option for impromptu dinner.

You'll need:

Tacos:

6 oz cooked frozen shrimp,  tails removed (100 calories)
2 corn tortillas (100 calories)
3 mushrooms (18 calories), stems removed and sliced
Cilantro, chopped
1/2 lime, juiced
raw spinach, stems removed

Thaw shrimp with cold water in the sink. Add to pan, and cook 2-3 minutes in butter cooking spray. Add lime juice after 2 minutes, and remove from heat. Toss shrimp with chopped cilantro. Set aside.

Saute mushrooms in cooking spray (you can also add onions, bell pepper, whatever you want) until golden. Set aside.

Heat tortillas in oven or stovetop. Stuff and serve! Delicious!

Avocado-Lime Crema

2 tbsp low-fat sour cream (I used organic)
1 tbsp mashed avocado
1 squeeze lime juice

Mix until smooth!

Buffalo Chicken Burgers! Yum!

I am currently obsessed with the chicken burger. Lean, delicious, and cheap! (Around $3.50/lb for all-natural)

These burgers can be done one of two ways - sauced while cooking, or with a buffalo sauce on the side (made with Greek yogurt). I chose the latter. I'll explain both methods, but I figured this would help assuage my desire for BLEU CHEESE DRESSING!

Buffalo Chicken Burgers

4oz ground chicken breast
1 tbsp flat-leaf parsley, chopped
1/4 medium avocado, mashed
1 tbsp Frank's Red Hot Buffalo Wing Sauce (love this stuff. if you do not have it, BUY IT.)

Blend chicken, parsley, and avocado together in a bowl until well-mixed. Form into patty and fry in non-stick pan (use cooking spray if desired).

Buffalo Sauce Method One: On the last flip, top with buffalo sauce and cook until slightly reduced. Delicious!

Buffalo Sauce Method Two: Mix buffalo sauce with 1 tbsp Greek yogurt. Use in place of condiments. Delicious! I had a lot extra, so I also used it as a dipping sauce for my yam fries!

Panko-Crusted Chicken Stuffed With Swiss, Spinach, and Pine Nuts

I've really been interested in turning foods that wouldn't be so healthy into less than 500 calorie dinners. This was one of those great experiments.

4 oz chicken breast
1 tsp pine nuts
1 wedge Laughing Cow cheese (I used French Onion)
10-14 leaves raw spinach, chopped
1 tbsp panko crumbs
butter cooking spray

Cut a pocket in chicken, set aside.

Toast pine nuts in skillet on medium low for a few minutes, until they smell delicious.

Mix cheese, pine nuts, and spinach in a bowl until combined. Stuff into chicken pocket and secure with toothpicks. (I didn't, and some of the filling popped out, so i just plopped it on top. JUST AS GOOD)

Spray with cooking spray, and roll in panko until coated. I also just sprinkled a little on top. I don't really like for it to be fully breaded, but a little crunch is nice.

I served with a huge spinach salad and green beans. YUM.

Ridiculously Good Chicken Burger with Yam Fries

So, I LOVE chicken burgers. After going to P. Terry's in Austin, I've always wanted to make my own. 

Problem, though, is that regular ground chicken is too much fat, ground chicken breast is too lean. What the hell is a girl to do? Enter my savior:

The avocado. I chopped about a quarter of one into my burger and oh Jesus. It is delicious. 

You'll need:

4 oz. ground chicken breast
1/4 medium avocado
1 tsp. cilantro
Salt and pepper to taste

Mix and fry in nonstick skillet. I just used butter-flavored spray (cuz I like it). It turned out beautifully! I didn't eat it on a bun, but you could certainly do that,

Yam Fries

You'll need:

1 jewel yam
Butter-flavored cooking spray
 Salt and pepper to taste

Preheat oven to 400. Cut yams into french fry-sized strips. Spread on cookie sheet and spray with cooking spray. Salt, pepper, bake for 15 or so minutes.

Veggie Omelet! Yum!

I eat too much sugar. Way too much sugar. Even in my attempts to be healthy, I was eating too much sugar. Using Livestrong's The Daily Plate, I was able to calculate the amount of sugar I should be consuming in a day, and I was far exceeding it.

Breakfast is the biggest sticking point. I was having yogurt/fruit and a fiber bar. Good for me, yes, but it equaled almost my entire amount of sugar for the day - wow. I also HATE HATE HATE waking up any earlier than I have to in the morning, so cooking was seemingly not an option. This omelet, though, changed my mind completely! The solution?

Pre. Cut. Vegetables. Last night, as I was cleaning up my kitchen from the veggie chili I posted yesterday, I chopped up the veggies for the omelet and combined them in a bowl. Cover it with cling wrap, and it'll be just fine through the night. I just used what I had in my fridge, but I imagine the veggies can be substituted across the board. Tomorrow, I'll probably try broccoli and whatever else looks good at the grocery store.

This recipe was also day 2 in my quest to not add any oil to cooked food. Cooking spray only!

You'll need:

Nonstick Skillet (I used a very small one and it turned out perfect!)
3 eggs, whites separated and yolks discarded (60 calories)
1/2 medium red bell pepper, diced (15 calories)
1/4 small onion diced (negligible)
3 white mushrooms, sliced (18 calories)
1/4c. fat free cheddar (45 calories)
1/4 medium avocado, chopped (40 calories)


saute veggies in skillet until soft. Pour in egg whites until evenly distributed. Cook on one side until set, then flip and cook until done. YUM. Top with avocado. Even YUMMER.

I would've thrown in some salsa, but I didn't have any. I'm going to make some of my own today and hope to goodness that it will stay good in the refrigerator.

Super Awesome Low-Cal (120 cal a serving!) Chili!

For whatever reason, even though it's Africa hot outside, I had my mind set on chili. I've been doing super-good about eating healthy lately ('sept for those sliders last night...oops) and splurged a little at lunch. So, I needed something filling but still low-calorie.

I remembered using Morningstar veggie crumbles as a meat sub in other things before, and thought that chili would be a good use for them, too. What the hell? It was going to taste like chili seasoning anyway. This recipe was a big step for me, considering that I always use at least SOME oil. This time, only cooking spray. After eating two gigantic (one cup) bowls of it, I am stuffed! When I was adding together the calories, I was freaking amazed. AND, it was delicious!

You'll need:

1 package veggie crumbles (i used about 4 2/3 cup servings, so 320 calories) I prefer Morningstar to Boca, and it's cheaper.
1 can fat free pinto or kidney beans, drained and rinsed. (110 calories)
1 can stewed or diced tomatoes (45 calories for organic)
1/4 pkg. chili seasoning (negligible)
Couple of shots reduced-sodium broth (negligible)
Onion (negligible) to taste

Spray non-stick pan with cooking spray. Add diced onion and cook til tender. Add crumbles and seasoning, then enough broth to moisten the pan. Cook a few minutes, til mostly browned. Add beans and tomatoes and simmer. 

Prepares about 4 servings at about 119 calories per serving. Holy. Shit.

I topped my first cup with a tablespoon of nonfat Greek yogurt (20 calories) and 1/4 cup nonfat cheddar (45 calories). On the second I added 1/4 a small avocado (50) calories. So, total, less than 500 calories packed full of fiber, protein, and super low-fat! I was impressed, for sure.
